Hi Everyone! Happy late new year. Wishing all my readers a happy and healthy year.
I wanted to share some food recipes that I have been making recently. In the past month, I made the decision to go vegan. This is something very new to me. I usually eat healthy but not only plant based.
One of my favorite recipes to make is vegetable soup. This recipe is either good to eat for lunch or dinner. Below is the recipe that I like to make it. This soup comes out to be absolutely delicious.
1 or 2 cups organic vegetable broth low sodium
1/2 cup organic celery or 2 celery stalks
1/2 red onion chopped
1 medium sweet potato
1 chopped scallion
1 organic zucchini
1 cup organic spinach or other dark leafy greens
For taste, add garlic, salt and pepper

Organic Zucchini
Salt
Pepper
Onion Powder
Garlic Powder
Oil of your choice, I use avocado oil drizzled
I preheat the oven to 350 degrees and bake the bites for 10-12 minutes.
Baking is super fun and takes up time if you are looking for something to do. The recipes are also a great way to start on a plant based diet.
Another great dinner recipe is Zucchini noodles. They are easy to make, filling, and delicious. My favorite is from the restaurant, Monty’s in Woodland Hills, California.
