Happy Monday everyone!

I am so excited to share a fun summer recipe with you! This recipe is a Thai Inspired Summer Salad. Please keep reading if you want to learn the recipe to try at home! This recipe was created by Angie Das, a chef and influencer. You can follow her on Instagram: @food.exotica

Thai Summer Salad

  1. 1 Napa Cabbage – finely chopped

  2. 1/2 Red Cabbage – finely chopped

  3. 3 carrots, grated

  4. 2 firm mangoes, diced

  5. 2 Red Bell Peppers, chopped

  6. Green Onions – 1 bunch, sliced

  7. Cilantro – 1 cup – chopped

  8. Mint Leaves – 1 tbsp – roughly chopped

  9. Peanuts & Cashews – 1 cup – Chopped

Dressing Ingredients

– 1/3 cup peanut butter

– 2 tbsp – soy sauce(low sodium)

– 3 tbsp – rice wine vinegar

– 2 Lemons – Juiced – 2 tbsp – Thai style sweet chili sauce – 1 tbsp – honey – 1 Large knob – ginger – grated – 2 Large garlic cloves – grated

How to Cook – Combine all the vegetables together in a large bowl – Set aside – Make the dressing by mixing the ingredients together in a medium bowl: A blender can be used instead of whisking – Add the dressing to the salad and toss – Serve with extra chopped peanuts and cashews on top – Enjoy!
