Happy Monday everyone!

Thai Summer Salad
1 Napa Cabbage – finely chopped
1/2 Red Cabbage – finely chopped
3 carrots, grated
2 firm mangoes, diced
2 Red Bell Peppers, chopped
Green Onions – 1 bunch, sliced
Cilantro – 1 cup – chopped
Mint Leaves – 1 tbsp – roughly chopped
Peanuts & Cashews – 1 cup – Chopped
Dressing Ingredients
– 1/3 cup peanut butter
– 2 tbsp – soy sauce(low sodium)
– 3 tbsp – rice wine vinegar
– 2 Lemons – Juiced – 2 tbsp – Thai style sweet chili sauce – 1 tbsp – honey – 1 Large knob – ginger – grated – 2 Large garlic cloves – grated
How to Cook – Combine all the vegetables together in a large bowl – Set aside – Make the dressing by mixing the ingredients together in a medium bowl: A blender can be used instead of whisking – Add the dressing to the salad and toss – Serve with extra chopped peanuts and cashews on top – Enjoy!
